Chamomile & Fennel Bitters


  • 17 g dried organic chamomile flowers
  • 1 five inch length dried licorice root
  • 10 g whole green cadamom pods
  • 15 g fennel seeds
  • 26 oz bottle London dry gin


  1. In a glass jar with a tight fitting lid combine all ingredients and top with gin.
  2. Seal tightly and shake well to mix.
  3. Set aside in a dark room at room temperature for three months.
  4. Strain with a fine mesh sieve before serving.
