Rhubarb Sour Recipe
This is a Rhubarb Cocktail made with gin and a homemade rhubarb cordial. The recipe was developed spur of the moment for an event. I had been working with some rhubarb cordial and nothing was really working. Finally at the last minute I just went with a classic gin sour. I used the rhubarb cordial. Shook it up with egg white and served it in a tall glass. People loved it. I tend to overthink things sometimes.

Rhubarb Cocktail Flavor
- Tart
Rhubarb is one of those flavors that changes when you cook it. Raw it is bitter, bright and bracing. You start a chain of chemical reactions when you cook rhubarb. Rhubarb transforms with heat. The flavor becomes warmer and richer.
The egg white gives this cocktail a nice frothy texture. Keep in mind that egg whites have a drying effect on cocktails. You will want to add a little sugar to keep a good round mouth feel.
You can use any London Dry Gin in this drink. I prefer a higher proof gin if it is available.
Rhubarb Cocktail
- 2 oz London Dry Gin
- 1 oz fresh lemon juice
- 1 oz rhubarb caordial
- Pour everything into a shaker filled with ice.
- Shake vigorously for ten to fifteen seconds.
- Strain into a tall glass filled with ice.
- Garnish with a strawberry.
