A Spicy Tropical Variation on the Classic Collins
The Rum Collins is an interesting variation on the classic Collins recipe. In this drink we replace the sugar or simple syrup with falernum. Falernum is a spicy tropical syrup or liqueur. It will bring some interesting new depths to your collins.

- Glass – Collins Glass
- Ice – Small cubes or pebble ice.
- Optional – falernum
Flavor Notes

This drink is a delicious blend of dark rum, lemon juice, falernum and soda. The ginger, allspice and nutmeg flavors in the falernum give this cocktail and interesting twist. The recipe calls for light rum. Havana Club 3 Year Old is nice. I like to use a good dark rum to harmonize the warm spice notes of the falernum. For a twist you could top this with ginger beer instead of soda.
Rum Collins
Ingredients
- 2 oz light rum
- 1 oz lime juice
- ¾ oz falernum
Instructions
- Put everything into a shaker filled with ice.
- Shake vigorously for 10 - 15 seconds.
- Strain into a collins glass filled with ice.
