Blood Orange and Juniper Shrub


  • 12Blood Oranges - Juiced. Peels reserved.Should yield about 3 cups of juice.
  • 1CupTurbinado Sugar
  • 1CupChampagne Vinegar
  • 8TbspsCrushed Juniper Berries


  1. Make an oleo saccharum with sugar and orange peels.
  2. Let oleo saccharum stand for about an hour.
  3. Combine orange juice, vinegar and oleo saccharum.
  4. Place mixture in resealable container and refrigerate at least three days before using.
