Blood Orange and Juniper Shrub


  • 12 Blood Oranges - Juiced. Peels reserved. Should yield about 3 cups of juice.
  • 1 Cup Turbinado Sugar
  • 1 Cup Champagne Vinegar
  • 8 Tbsps Crushed Juniper Berries


  1. Make an oleo saccharum with sugar and orange peels.
  2. Let oleo saccharum stand for about an hour.
  3. Combine orange juice, vinegar and oleo saccharum.
  4. Place mixture in resealable container and refrigerate at least three days before using.
